Mediterranean Barbeque Marinade Recipes


Here's some Mediterranean style barbeque marinade recipes for fish or chicken.

The marinades on this page are both variations on a theme, and are really simple to make. They all follow the rule of something acidic, some oil and something to flavor it.

Each should be enough for 6 pieces of chicken – thighs/legs or breasts – or fish.

They will work with vegetables as well, courgette (zucchini), squash, eggplant, etc, to serve as side dishes.

A Mediterranean Barbeque Marinade

This one is made quite robust by the chilli and wine, and is better with a stronger tasting fish like salmon. Chicken is OK too.

Ingredients

  • ½ cup of olive oil

  • 1 cup of decent white wine

  • 1 lemon, zested and juiced

  • 1 clove of garlic, crushed

  • Small red onion, finely chopped

  • 1 small red chilli, seeded and finely chopped

  • Sprigs of basil, oregano, thyme, leaves striped and chopped

  • Salt and fresh ground black pepper
Method

Mix everything together in a bowl.

Immerse the fish in the marinade for 30 minutes (chicken up to an hour), making sure everywhere is coated, then season and grill it as usual.

Mediterranean Fish Marinade Recipe (or chicken marinade)

Try with bass, sea bream, or any white fish, or chicken. Enough for 6 fillets.

Ingredients

  • ¼ cup of olive oil

  • ¼ cup of fresh lemon juice

  • 1 lime, juice squeezed

  • 4 tbsp fresh parsley

  • 4 tbsp fresh coriander/cilantro

  • 3 garlic cloves, crushed

  • Salt and fresh ground black pepper
Method

Mix everything together in a bowl.

Immerse the fish in the marinade for 30 minutes (chicken up to an hour), making sure everywhere is coated, then season it and barbecue as usual.
