Eastern North Carolina BBQ Sauce




This Eastern North Carolina BBQ sauce is pretty darn hot, but comes with a sweet and tangy sharpness. Use it as a basting sauce for slow barbecued or smoked pork - like pulled pork.

You could double or even triple the quantities if you have a lot of mouthes to feed and a big piece of meat for your barbecue smoker.

Make it a couple of days in advance to give the flavors chance to mix and mellow a bit.

Ingredients

  • 1/2 cup of cider vinegar

  • 1 tsp Tabasco sauce

  • 1 tsp cayanne pepper

  • 1 tsp of brown sugar

  • 1 tsp of fresh ground black pepper

  • big pinch of salt

Method

Just mix it all together and leave it in the refrigerator for a day or two, stirring from time to time. It should keep for a couple of months.

Variations

Some people find this homemade BBQ sauce recipe quite overpowering.

Be aware of the amount of cayenne and pepper sauce you use - swap the cayenne for a teaspoon of black pepper.

Or use a quarter cup of cider vinegar and a quarter cup of water. Experiment as you see fit.
